Chocolate Zucchini Cake

1/2 cup vegetable oil
1 1/2 cups white sugar
2 tsp. vanilla extract
2 cups flour or flour substitute
1/2 cup unsweetened cocoa powder
1 1/2 tsp. baking soda
1 tsp. salt
1 cup rice milk OR water
2 cups shredded zucchini
1 recipe chocolate icing

Preheat oven to 350.  Grease and flour a 9x13 pan.  In large bowl, mix together oil, sugar, and vanilla.  In another bowl, mix together dry ingredients: flour, cocoa powder, baking soda, and salt.  Stir into wet mixture.  Add one cup of rice milk; fold in the zucchini.  Spread evenly into the prepared pan.  Bake for 25-30 minutes until toothpick comes out clean.  Frost with chocolate icing.

    So moist and yummy. This is my favorite cake recipe.
