Pineapple Oat Cookies

1 cup sugar
1/2 cup shortening
1 flax egg
1 can (8 oz.) crushed pineapple, undrained
1 1/4 cup flour or flour substitute
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1 1/2 cups oats

Cream shortening and sugar until fluffy.  Beat in flax egg; stir in pineapple.  In a medium bowl, combine flour, salt, baking soda, cinnamon, nutmeg, and oats.  Add to wet mixture; mix well.  Drop by spoonfuls onto baking stone.  Bake at 375 for 12-15 minutes.  Cool a minute, then transfer to wire rack.  Makes about 3 dozen.

    Pretty good but they fall apart kind of easily.
