Pink Marshmallow Muffins

1 1/2 cups flour or flour substitute
1/2 tsp. salt
1 tsp. baking soda
1/2 cup sugar
1 cup applesauce
1 banana, mashed

For Pink Marshmallow Topping:
1 pkg. (3 oz.) strawberry or cherry jello
1/2 cup boiling water
2 tbsp. applesauce
3/4 cup powdered sugar

To make muffins:  Combine flour, salt, and baking soda in a small bowl.  In a medium bowl, beat together sugar, applesauce, and banana.  Slowly beat in dry mixture.  Pour in 12 muffin tins and bake at 350 for 22-25 minutes.

To make marshmallow topping:  Beat jello mix and boiling water for 5 minutes until it is light and foamy and beginning to cool.  Beat applesauce in for another 5 minutes.  Finally, beat powdered sugar in, 1/4 cup at a time, for another 5 minutes.  Twirl muffins in foam immediately and let the marshmallow set up.

    The muffins are not very sweet but the marshmallow topping makes it a little more fun.
