Grease and flour a 8x8 or 9x9 pan. In a small bowl, combine cocoa, flour, baking soda, and salt. In a large bowl, mix together margarine, sugar, vanilla, and egg replacement. Beat until light and fluffy, about 2 minutes. On low speed, mix dry mixture into margarine mixture. Add rice milk, vanilla, and hot water and mix until combined. Spread batter into pan and bake at 350 for 14-18 minutes or until toothpick comes out clean. If desired, frost with 1/2 a recipe for chocolate icing.

These actually turned out amazing. It was supposed to be more of a cake but mine came out like brownies. I used oat flour and Ener-G egg replacer. I would recommend a 8x8 pan versus 9x9.
