Cake in a Cup

4 tbsp. flour or flour substitute
4 tbsp. sugar
2 tbsp. cocoa powder
1 egg replacer
3 tbsp. rice milk
3 tbsp. oil
1/2 tsp. vanilla

In a large mug, stir together flour, sugar, and cocoa powder.  Add the egg replacer, rice milk, oil, and vanilla.  Mix to combine.  Cook for 3 minutes in the microwave.  Allow to cool for a minute then serve.

    I have tweaked it a bit - I use a real egg which helps a lot with the texture. Then I do 2T of brown sugar and 2T of white sugar and add more cocoa (like 2 1/2 T). It makes it a big more chocolate-y. It's kind of weird, but it does work in a pinch and it's very fast to whip up.

    This is okay for a cake that just came out of a microwave. It is not a soft fluffy cake though so don't bother if that is what you are looking for. If you just really NEED a chocolate fix, this will do.
