Chewy Double Chocolate Cookies

2/3 cup margarine
1 cup sugar
1/4 cup applesauce
2/3 cup buttermilk substitute
1 tsp. vanilla
2 cups flour
1/2 cup cocoa
3/4 tsp. baking soda
1/2 tsp. salt
1 cup chocolate chips

Cream together margarine and sugar.  Add applesauce, buttermilk substitute, and vanilla and cream until well blended.  In a medium bowl, combine flour, cocoa, baking soda, and salt.  Add to wet ingredients and mix on low for about 1 minute to combine.  Increase speed to medium high and beat for 2-3 minutes.  Stir in chocolate chips.  Use an icecream scoop to drop dough onto baking stone.  Bake at 400 for 9-13 minutes or until set.  Cool several minutes on stone before transferring to a baking rack.

    I recently brought these to small group and they were a hit. The kids gobbled them up and the grown ups liked them too. They are supposed to mimic like a little debbie type snack. For flour, I did 25% oat flour, 25% whole wheat flour, and 50% all purpose.
