Rich Chocolate Buttercream Frosting

1/2 cup shortening
1/2 cup margarine, softened
3/4 cup cocoa
1 tsp. vanilla
4 cups powdered sugar
3-4 tbsp. rice milk

In a large bowl, cream together shortening and margarine.  Add cocoa and vanilla.  Gradually add sugar, one cup at a time, beating well on medium speed.  When all sugar is mixed in, icing will appear dry.  Add rice milk and beat at medium speed until light and fluffy.  To make a spreading consistency, add an additional 3-4 tbsp. rice milk.

    Super yummy. It can be piped onto cupcakes or spread onto cakes.
