White Bean Salad II

1/4 cup olive oil
2 tbsp. sun-dried tomato infused oil (from jar)
1 tbsp. red wine vinegar
1/4 tsp. salt
1/4 cup sun-dried tomatoes, chopped
2 cans (16 oz.) great northern beans, drained and rinsed
1/3 cup red onion, diced
2 cloves garlic, minced
1/4 cup basil or parsley, chopped
1/4 cup bell pepper, chopped

In a medium bowl, whisk together oils, vinegar, and salt.  Add tomatoes, beans, onion, garlic, basil, and bell pepper.  Stir to coat.  Chill a few hours before serving.

    This was a yummy and flavorful salad. Super easy to make too. We used one of the orange bell peppers from our garden.
