Vanilla Bean Icecream

9 tbsp. Vance's DariFree
3 tbsp. arrowroot or tapioca starch
6 tbsp. sugar
3 cups water
3 tbsp. margarine
2 vanilla beans, seeded

Place DariFree, arrowroot, and sugar in a heavy saucepan and whisk to combine.  Add water, whisk, and cook over medium-high heat until the mixture begins to bubble, stirring constantly.  Add margarine and vanilla bean seeds.  Stir to combine.  Remove from heat and refrigerate overnight.  Freeze in an icecream maker according to manufacturer's directions.

    This tastes very creamy and delicious. It is super low fat too. You can get Vance's DariFree online or at some health food stores.
