Neiman Marcus Cookies

1 3/4 cup flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup margarine, softened
1 cup brown sugar
3 tbsp. sugar
1 egg replacer
2 tsp. vanilla
1 1/2 tsp. instant espresso
1 1/2 cups chocolate chips

In a medium bowl, combine flour, baking powder, baking soda, and salt.  In a large bowl, cream the margarine with the sugars until fluffy.  Beat in the egg replacer and vanilla for 30 seconds.  Beat the flour into the margarine mixture on low for about 15 seconds.  Stir in the espresso powder and chocolate chips.  Drop by heaping tablespoonfuls onto a baking stone.  Bake at 300 for 20 minutes or until browned on edges.

    Seriously phenomenal. I loved them. They are delicious warm and pretty darn good the next couple days too. I used enerG to replace my egg.
