1 carrot, peeled and chopped
32 oz. frozen corn
2 medium potatoes, peeled and diced
8 cups chicken broth

Heat olive oil in a small saucepan. Brown onion in the oil. Dump onion, bell pepper, carrots, corn, and potatoes into a slow cooker. Add chicken broth. Cook on high for 4-5 hours or low 8-9 hours. Use an immersion blender to puree and make it creamy if desired.
