1 cup red bell pepper, diced
1/2 cup celery, diced
4 oz. can green chilies
1 tbsp. chili powder
2 tsp. cumin
1/2 tsp. coriander
1/4 tsp. pepper
2 tbsp. garlic, minced
15 oz. can diced tomatoes with green chilies, drained
2 cups cooked chicken, diced
1 cup mexican cheese blend (optional)
4 fish fillets (salmon or tilapia)
salt and pepper to taste
1 cup mango or pineapple, peeled and diced
1 cup carrots, cut into matchsticks
1 cup sugar snap peas
1 tbsp. margarine, cut into 4 pieces
