Personal Sized Baked Oatmeal
2 egg replacers
2 cups unsweetened applesauce
1 banana, mashed
1/2 cup sugar (or 1 1/2 tsp. stevia powder)
1 tsp. vanilla
5 cups oats
1/4 cup flaxseed
1 tbsp. cinnamon
1 tbsp. baking powder
1 tsp. salt
2 3/4 cup rice milk
optional toppings: raisins, walnuts, chocolate chips, coconut, brown sugar
Mix egg replacers, applesauce, banana, sugar, and vanilla together in a bowl. Stir in oats, flax, cinnamon, baking powder, and salt; mix well. Pour in rice milk and stir to combine. Spray 12 muffin tin cups with cooking spray and pour mixture in evenly. If using toppings, add to tops of muffins. Bake at 350 for 30 minutes or until a toothpick comes out clean. Cool and enjoy or freeze them in freezer bags.

Chocolate Cupcakes
1/4 cup oil
3/4 cup sugar
1/4 cup non-dairy yogurt
1/4 cup applesauce
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. cinnamon (optional)
1 tsp. baking soda
2/3 cup rice milk
2 tbsp. lemon juice
1/3 cup cocoa powder
1 cup flour
1/2 cup chocolate chips
Beat oil, sugar, yogurt, and applesauce with an electric mixer until smooth. Beat in vanilla, salt, and baking soda until well blended. Add rice
milk and lemon juice and beat well. Beat in cocoa powder, then flour, beating 3 minutes after last addition. Stir in chocolate chips. Divide
between 12 cupcakes. Bake at 350 for 25 minutes or until a toothpick comes out clean. Cool on rack. Frost as desired.

One Minute Chocolate Cake

Deep Dish Cookie Pie
2 cans white beans or garbanzos, drained and rinsed
1 cup quick oats
1/4 cup unsweetended applesauce
3 tbsp. oil
2 tsp. vanilla
1/2 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups brown sugar
1 cup chocolate chips
Blend everything except the chips very well in a food processor. Mix in chips and pour into a greased 9" round pan. Cook at 350 for 35-40 minutes. Let stand at least 10 minutes.

Reese's Iceceram Cake
24 ice cream sandwiches
16 oz. cool whip
1 jar caramel sundae topping
1 bag of reeses peanut butter cups, coarsely chopped
Line a 9x13" pan with foil. Lay half the icecream sandwiches (whole) in the bottom of the pan, trimming the last one to get it to fit. Top with half of the cool whip, half of the caramel sundae topping, and half of the candy. Repeat these steps again, cover and freeze. Enjoy!

Thai Pork Salad
1 pound ground pork
1 tablespoon oil
3 tablespoons uncooked jasmine, long-grain, or sticky rice
1 tablespoon fish sauce
1 to 2 teaspoons chili sauce
1 teaspoon sugar
Juice from 1 small lime
1 shallot, thinly sliced
2 green onions, chopped
1/4 cup cilantro
1/4 cup mint
3 or 4 dried red chilis for garnish (optional)
cabbage, lettuce, or rice to serve on
Heat the cooking oil in a wok or large skillet over medium heat. Cook and crumble ground pork until done, about 3-4 minutes. Set aside
to cool. Heat a small skillet over medium heat. Toast the uncooked rice in the skillet, stirring every few seconds to avoid burning until the
rice is golden brown and has a nutty fragrance. Use a coffee grinder or mortar to pound rice until it turns to a powder. Once the pork has
cooled for at least 5 minutes, stir in the toasted rice powder, fish sauce, chili sauce, sugar, and lime juice. Add pepper to taste. Toss the
pork with shallots, green onions, cilantro, and mint. Garnish with red chilis if desired. Serve over rice or wrapped in cabbage or lettuce
leaves.

Frappuccino
1 1/2 cups vanilla coconut milk
1 cup double strength coffee, chilled
2 cups ice
2 tbsp. instant coffee
2 tbsp. choc syrup
Sugar to taste
whipped cream (optional)
Blend all ingredients (except whipped cream). Serve topped with whipped cream and additional chocolate syrup if desired.

Baked Pork Chops
2 lbs. pork chops
2 tsp. salt
1/2 tsp. pepper
2 tsp. italian seasoning
Rub salt and pepper on the pork chops until evenly distributed on both sides. Sprinkle the italian seasoning and let stand for 30 minutes. Place pork chops on a roasting pan with a rack and bake at 450 for 35-45 minutes.
