Spiced Sweet Potato Fries

2 sweet potatoes
2 tbsp. olive oil
1 tsp. sea salt
pepper to taste
1 1/2 tsp. lime zest
1/8 tsp. chili powder
1/8 tsp. paprika
1/8 tsp. crushed red pepper flakes
1/4 cup chopped cilantro (optional)
Cut potatoes into wedges and arrange in a single layer on a baking sheet.  Brush with olive oil.  Combine salt, pepper, lime zest, chili powder, paprika, and crushed red pepper flakes in a small bowl.  Sprinkle over the potatoes.  Bake at 400 for 30-45 minutes or until golden brown and crispy on all sides, turning as needed.  Sprinkle with cilantro if desired.
