Brownie Pudding Cake

1 1/2 cups flour or flour substitute
3/4 cup sugar
1/2 cup cocoa powder, divided
2 tsp. baking powder
1/8 tsp. salt
3/4 cup rice milk
2 tbsp. vegetable oil
2 tsp. vanilla
1 cup brown sugar
1 3/4 cup boiling water

Preheat oven to 350.  In an ungreased 9x9 baking pan, combine flour, sugar, 1/4 cup of cocoa, baking powder and salt.  Add the milk, oil, and vanilla.  Stir just until smooth.  Spread the batter evenly in the pan.  Sprinkle with the brown sugar and remaining 1/4 cup cocoa.  Pour the boiling water over batter.  Bake immediately for 30-35 minutes or until toothpick inserted in center of cake layer comes out clean.  Serve warm.

    Pudding is an almost non-existent food on a milk-free diet. This is an awesome way to get both pudding and a brownie!
