1 1/4 cups oats

1 cup mashed banana (about 2-3)

In a medium mixing bowl, combine oats, honey, margarine, and vanilla. Stir in the egg replacer, banana, and coconut until well combined. In a small bowl, combine flour, baking soda, and salt. Stir dry mixture into wet mixture until just moistened. Spoon into 9 greased muffin cups and bake at 350 for 25 minutes or until toothpick comes out clean. Chill for a few hours then serve.

I made these with oat flour and enerG egg replacer. They were delicious!
