10 oz. bag fresh spinach
3 tbsp. margarine (divided)
2 tbsp. flour
1/2 cup rice milk, hot
1 tsp. salt
1/4 tsp. pepper

1/4 tsp. pepper
Melt 1 tablespoon margarine in a large pan and add spinach. Cover pot until spinach becomes limp. Meanwhile, in a small saucepan, melt other 2 tbsp. margarine; blend in flour. Stir and cook for a minute until flour is turning golden and bubbly. Whisk in hot rice milk. Season with salt and pepper and simmer until thickcned. Pour the cream sauce into the spinach and blend together. Simmer for about 3 more minutes.

This was a great way to make spinach. You could probably even do this with frozen spinach.
