Combine the flour, baking powder, baking soda, salt, and coconut in a large bowl. In a medium bowl, combine oil, honey, vanilla, and mashed bananas. Make a well in the center of the dry ingredients and pour in the wet mix. Fold batter together until just combined. Pour batter into greased 9x5 loaf pan and bake at 350 for 33-37 minutes or until a toothpick comes out clean.

This was delicious. I made it with mostly oat and whole wheat flour and just a little bit of all purpose flour. I used honey as my sweetener because it was cheapest. To grate my coconut, I just put some flakes in my Magic Bullet and whizzed it a few times.
