1 lb. pizza dough (homemade or store bought)
4 oz. pepperoni slices, halved
4 oz. pizza sauce
4 oz. mushrooms
1/2 onion, chopped
salt and pepper to taste
1 cup cheese (optional)

Lightly saute mushrooms and onions in a little bit of olive oil; set aside. Divide pizza dough into 4. Roll each ball out into rounds about 1/4" thick. In a medium bowl, combine pepperoni, pizza sauce, mushroom and onions, and salt and pepper to taste. Put a scoop on each dough round. Top each with 1/4 cup cheese (if desired). Fold dough over and pinch to seal. Bake at 350 for 12-15 minutes or until golden brown.

I love the concept of calzones because each person can make theirs to their own specification (cheese or no cheese). I can't wait to try different fillings.
