1 lb. ground turkey
3 tbsp. oil, divided
2 cloves garlic, minced
1/2 tsp. salt
1/4 tsp. white or black pepper
2 tsp. sage
1 tbsp. thyme
1/8 tsp. cayenne
1/8 tsp. allspice
1/2 tsp. fennel seeds
8 biscuits
4 eggs, cooked (optional)

In a medium bowl, combine 2 tbsp. oil, glaric, salt, pepper, sage, thyme, cayenne, allspice, and fennel seeds. Add ground turkey and stir just until combined. Wrap in saran wrap and refrigerate for at least an hour or up to 1 day. Heat a heavy skillet over medium heat; add remaining tablespoon of oil. Shape the turkey mixture into 2 1/2" patties about 1/4" thick (there should be 8-10 of these). Fry in batches until browned on both sides and cooked through. Slice biscuits down the center and place a sausage patty in the middle, topped with cooked egg patties (if desired).

This meal was very yummy even without the eggs. The sausage is very flavorful and doesn't even need a sauce.
