1 lb. ground turkey
1/3 cup "soy" sauce
3 tbsp. lemon juice
1 tbsp. minced garlic (about 4 cloves)
1 1/2 tbsp. minced ginger (about 2" piece)
1 cup shredded carrots
1 cup green onions, thinly sliced
1 cup red bell pepper, thinly sliced
1 cup water chestnuts, finely chopped
2 cups rice, cooked
8 large lettuce leaves
1/3 cup "soy" sauce
3 tbsp. lemon juice

2 cups rice, cooked
8 large lettuce leaves
In a large skillet, brown and crumble turkey. In a small bowl, mix together "soy" sauce, lemon juice, garlic, and ginger. Once the turkey is cooked, pour about half of the mixture into the pan and allow to soak into meat and evaporate. In a medium bowl, combine carrots, green onions, bell pepper, and water chestnuts. When ready to serve, place lettuce on plate; scoop on a few tablespoons of turkey, rice, and veggies; roll up to eat. Serve with remaining sauce to dip.
