1 cup rice milk
3/4 cup quick oats
3 tbsp. onion, finely chopped
1 1/2 tsp. salt
1 1/2 lbs. ground beef
1 cup ketchup
1/2 cup water
3 tbsp. vinegar
2 tbsp. sugar

In a medium bowl, combine rice milk, oats, onion, and salt. Add ground beef and squish to combine. Shape into 2" balls (about 16-20). Place in a slow cooker (place a liberally sprayed piece of foil between layers if desired). In a small bowl, combine ketchup, water, vinegar, and sugar. Pour over meatballs. Cover and cook on low for 5-7 hours or until done. Serve on hoagie rolls or rice.

These were delicious and super duper tender. You have to be careful when getting these out of the crockpot.
