1 cup zucchini, shredded
1/2 cup chocolate chips

Cream together sugars, egg replacer, vanilla, and margarine. Add flour, baking soda, baking powder, and salt. Stir well. Add zucchini and chocolate chips. Bake at 375 for 14-7 minutes or until done.

These were super awesome!! I used whole wheat white flour and EnerG to replace my egg. My zucchini was already peeled and shredded but you could always leave the peel on if you want.
