In a large bowl, combine the water, vegetable oil, applesauce, sugar, and vanilla. Stir in the zucchini and mix well. In a medium bowl, combine the flour, cinnamon, baking soda, baking powder, and salt. Stir the dry ingredients into the wet ingredients until just combined. Pour into 1 sprayed 9x5 pan or 2 sprayed 8x4 pans. Bake at 350 for 50-60 minutes (for 2 pans) or 65-70 minutes (for 1 pan) or until a toothpick comes out clean.

This got rave reviews from the many people who tasted it. The neighbors loved it (and even to offered to mow the lawn again!), my parents loved it, and even my 3-year-old loved it. Definitely worth making.
