Zucchini Beef Casserole

1 lb. ground beef
1 onion, chopped
1 tbsp. olive oil
2 large zucchini, quartered and sliced (about 4 cups)
1 can (15 oz.) italian-style diced tomatoes
8 oz. tomato sauce
6 oz. tomato paste
1 bell pepper, chopped
1 cup black olives, halved lengthwise
1/2 tsp. salt
1/4 tsp. garlic powder

In a large oven-safe skillet, saute beef and onion in olive oil.  Once browned, add zucchini, tomatoes, tomato sauce, tomato paste, bell pepper, olives, salt, and garlic.  Simmer for 10 minutes.  Cover and bake at 350 for 1 hour, uncovering after 45 minutes.  Serve over rice or pasta if desired.

    This had great flavor. You can top with cheese if you can have dairy.
