Apricot Glazed Turkey Burgers

1 tbsp. mustard
1 tbsp. apricot preserves
1 egg replacer
1/4 cup quick oats
1/4 cup celery, finely chopped
3 tbsp. dried tart cherries, finely chopped
1/4 tsp. salt
pinch pepper
1 lb. ground turkey

For glaze, stir together mustard and preserves.  Set aside.  In a medium bowl, combine egg replacer, oats, celery, dried cherries, salt, and pepper.  Add ground turkey; mix well.  Shape into 4 patties.  Grill for 5 minutes per side or until done.  Brush with glaze during the last minute of cooking.  Serve on buns with remaining glaze.
