2 cups flour
2/3 cup quick oats
2 tsp. baking powder
1/2 tsp. salt
1 1/4 cups sugar
1/2 cup margarine, softened
2 egg replacers
1 cup buttermilk substitute
1 tsp. vanilla
Topping:
1/4 cup flour
1 cup brown sugar
1/4 cup margarine
1 1/2 tsp. cinnamon
2/3 cup raisins
2/3 cup quick oats

1/2 tsp. salt
1 1/4 cups sugar
1/2 cup margarine, softened

1 cup buttermilk substitute
1 tsp. vanilla
Topping:
1/4 cup flour
1 cup brown sugar
1/4 cup margarine
1 1/2 tsp. cinnamon
2/3 cup raisins
In a meidum bowl, whisk together flour, oats, baking powder, and salt. In a large bowl, cream together margarine and sugar until light. Beat in egg replacers. Blend in 1/3 of the flour mixture, then half of the buttermilk and vanilla, then 1/3 flour, half the buttermilk and vanilla, and the last bit of flour. Set aside to make topping.
For the topping: Combine flour, brown sugar, and cinnamon. Cut in cold margarine until mixture resembles coarse sand.
Pour batter into a greased 9x9 or 11x7 baking dish. Sprinkle topping over top. Evenly sprinkle raisins over the top. Bake at 350 for 45-50 minutes or until a toothpick comes out clean.

Very good. The sugar gives it a crunchy top. I replaced my eggs with applesauce.
