White Bean Avocado Wrap

2 tbsp. cider vinegar
1 tbsp. oil
2 tbsp. green chilies or chipotle chile, finely chopped
1/4 tsp. salt
2 cups red cabbage, shredded
1 carrot, shredded
1/4 cup cilantro, chopped
15 oz. can white beans, drained and rinsed
2 ripe avocados
1/2 cup cheddar cheese (optional)
2 tbsp. red onion, minced
4 wraps or large tortillas

Whisk vinegar, oil, chili, and salt in a medium bowl.  Add cabbage, carrot, and cilantro; toss to combine.  Set aside.  Mash beans and avocados in another medium bowl.  Stir in cheese (if using) and onion.  To assemble the wraps, spread 1/2 cup bean-avocado mixture onto each wrap and top with about 2/3 cup of the slaw.  Roll up.  Cut in half to serve if desired.
