Versatile Fried Rice

1 tbsp. oil
2 cups cooked rice, cold
1 lb. cooked chicken / beef / shrimp / fish, cut into bite size pieces
5 eggs
2 cups frozen peas
6 scallions, chopped
1-2 cups vegetables, chopped
3 tbsp. "soy" sauce

Heat oil in a large skillet on medium high.  Add cooked rice and fry for 1-2 minutes, stirring constantly.  Move the rice to outside of pan.  Crack eggs in the center of the pan and scramble.  Add the vegetables, meat, and soy sauce and stir together until well heated.
