1 cup orange juice
1 tbsp. vinegar
1 tbsp. "soy" sauce
2 tbsp. margarine
2 tbsp. sugar
2 tbsp. flour or flour substitute OR 1 tbsp. corn starch
1/8 tsp. ground ginger
4 boneless skinless chicken breasts
2 tbsp. olive oil
1 tbsp. vinegar
1 tbsp. "soy" sauce
2 tbsp. margarine
2 tbsp. sugar
2 tbsp. flour or flour substitute OR 1 tbsp. corn starch
1/8 tsp. ground ginger
4 boneless skinless chicken breasts
2 tbsp. olive oil
In a blender, combine orange juice, vinegar, "soy" sauce, margarine, sugar, flour, and ginger. Blend until well combined. Pour into a small saucepan and cook over medium heat until thickened, stirring often. Pound out chicken breasts or slice them down the middle to make thin paillards. Season with salt and pepper. In a large skillet, heat olive oil. Saute the chicken until cooked through. Spoon sauce over chicken and hot cooked rice if desired.
