Hearty Brunch Potatoes

7 medium potatoes, peeled, and diced into 1/2” cubes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 cup mushrooms, sliced
1 cup frozen corn, thawed (optional)
1 large onion, chopped
4 cloves of garlic, sliced
16-20 oz. pork sausage patties
salt and pepper

Place potatoes in a saucepan and cover with water.  Bring to a boil; reduce heat and cook until just tender, about 7 minutes; drain.  Meanwhile, in a large skillet, cook sausage patties until cooked through.  Remove and cut into bite-size pieces.  Drain most of the sausage grease.  In remaining grease, saute peppers, corn, mushrooms, onion, and garlic until tender; fold in sausage.  In a 9x13 pan, pour drained potatoes and salt and pepper to taste.  Pour vegetable mixture on top.  Fold together.  Bake, uncovered, for 20 minutes or until heated through.
