We have our very first garden this year. It is a modest one at 8x8. We are growing red, orange, and yellow bell peppers; cherry, heirloom, and big beef tomatoes; and zucchini. Lots and lots of zucchini. So far, I have shredded 10 cups worth and have at least that amount waiting for me on the vine. And it's only the beginning of the season.
Why does this matter? Expect to see lots and lots of recipes containing zucchini! I just hope you have some in your garden too. If you don't have a garden, at least it is cheap at the grocery store.
