1 stick margarine, softened
1 cup sugar
1/2 cup brown sugar
1/2 cup applesauce
1 tsp. vanilla
1 1/2 cups (about 2 medium) apples, peeled, cored, and chopped
1/8 cup lemon juice
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. cinnamon

In a large bowl, cream margarine and sugars together. Add applesauce and vanilla and beat until smooth. In a small bowl, toss chopped apples and lemon juice. In a medium bowl, mix all the dry ingredients together (flours, baking soda, cinnamon). Slowly beat dry ingredients into wet ingredients. Stir in apples. Pour batter into 9x5 loaf pan coated with cooking spray. Bake at 350 for 55-60 minutes, or until a knife comes out clean.
