Blueberry Muffins

1 3/4 cup flour or flour substitute
1/3 cup sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup fresh blueberries
3/4 cup rice milk
3 tbsp. applesauce
1/3 cup margarine, melted

In a large bowl, combine flour, sugar, baking powder, and salt.  Stir in blueberries.  Add rice milk, applesauce, and butter.  Mix just until dry ingredients are moistened.  Spoon into greased muffin cups.  Bake at 400 for 20-25 minutes.  Makes 12 muffins.
