Asian Fish Foil Pack

4 fish fillets (salmon or tilapia)
salt and pepper to taste
1 cup mango or pineapple, peeled and diced
1 cup carrots, cut into matchsticks
1 cup sugar snap peas
1 tbsp. margarine, cut into 4 pieces
Cut eight 12" squares of foil.  Season fillets with salt and pepper.  Place each piece of fish on four of the foil pieces.  Top each with mango/pineapple, carrots, and sugar snap peas.  Pour 1 tbsp. "soy" sauce on each and top with a piece of margarine.  Place second piece of foil over each fish pack.  Fold pieces together sealing on all four sides.  Place on baking sheet and bake at 450 for 12-15 minutes.
