Om Nom Chicken

2 lbs. chicken thighs
1/2 cup dijon mustard
1/4 cup maple syrup
1 tbsp. rice vinegar
1/4 tsp. salt
1/4 tsp. pepper
1 tbsp. cornstarch
1/2 cup water
Put chicken thighs in a crockpot.  Mix together dijon mustard, maple syrup, rice vinegar, salt, pepper, cornstarch, and water.  Pour over chicken.  Cook on low for 6-8 hours.  Remove bones and serve on rice.
