Chicken and Rice Soup

2 lbs. chicken pieces
4 cups chicken broth
2 cups uncooked rice
2 tbsp. olive oil
1 onion, chopped
2-3 ribs celery, sliced
2-3 carrots, chopped
salt and pepper to taste
Place chicken in a large pot.  Add enough water to cover chicken.  Boil and cook chicken for about an hour or until chicken is tender and cooked through.  Remove chicken pieces from the liquid and set aside.  Pour in additional chicken broth if needed.  Bring broth to a boil and add uncooked rice.  Cook for 20 minutes or until tender.  When cool enough, remove skin from chicken and cut off of the bone; cut into bite-size pieces.  Meanwhile, saute onion, celery, and carrots in olive oil until tender.  Add chicken and vegetables into the broth pot.  Serve.
