Zucchini Brownies II

1/2 cup zucchini, shredded
1/3 cup applesauce
1 cup plus 2 tbsp. water
2 tsp. vanilla
3/4 cup honey
3 tbsp. flaxmeal
1/2 cup plus 2 tbsp. coconut oil
3/4 cup cocoa powder
1 cup coconut flour
1/2 tsp. salt
1/2 cup chocolate chips (optional)
In a large mixing bowl, whisk together zucchini, applesauce, water, vanilla, honey, flaxmeal, and coconut oil.  Allow to sit for at least 5 minutes.  Combine cocoa powder, coconut flour, and salt in a separate bowl.  Pour dry ingredients into the wet ingredients and stir well.  Pour mixture into a greased 9x13 pan and make sure batter is evenly distributed.  Bake at 350 for 20-25 minutes, then pat down hard with a spatula or parchment paper.  Let sit for 15-30 minutes before trying to cut into squares.  Frost with honey chocolate icing if desired.
