Green Hummus

1 can chickpeas, drained
1/4 cup olive oil
1 clove garlic
1 tbsp. lemon juice
2 cups raw spinach
2 tbsp. cilantro or basil (optional)
water as needed
Pour all ingredients into a blender or food processor and blend until well-combined.  Add water if needed to desired consistency.  Serve with chips or crackers or on tortillas.
