Chocolate Peppermint Truffles

1/2 cup nut butter (pecan, peanut, sunflower, almond)
2/3 cup chocolate chips
9 dates
1 tsp. to 1 tbsp. peppermint extract 
In a food processor, combine all the ingredients and blend until a dough starts to form.  Add peppermint extract by teaspoon until it tastes good to you (different nut butters will require different amounts).  Roll into 1" balls and place on a lined baking sheet.  Store in the fridge to firm them up, about 20 minutes.  Makes about 15 balls.
