You can replace an egg with any of the following:
1/2 banana: Add 25-50% more leavening agent
1/4 cup applesauce: Add 25-50% more leavening agent
1 tbsp. flax seed with 3 tbsp. hot water
1 1/2 tsp. ener-G with 2 tbsp. water
