1 cup flour or flour substitute

1 tsp baking soda

2 flax "eggs"
1 tbsp honey
1 1/2 cups rice milk

In a large bowl, combine flour, oats, baking soda, cream of tartar, and salt. In a small bowl, mix together flax "eggs", honey, and milk. Add the wet ingredients to the dry ingredients and mix well. Let stand about 5 minutes. Drop batter by spoonfuls into a sprayed skillet. When bubbles form, flip pancakes and cook other side. Makes about 12 pancakes.

These are almost muffin-like in texture. They are so full of fiber and good for you.
