1 1/2 cups flour or flour substitute

3 large ripe bananas, mashed
1/2 cup applesauce
1/4 cup margarine, melted
1/4 tsp. vanilla extract

1/2 cup chopped walnuts (optional)

Preheat oven to 350. Mix the flours, sugar, baking soda, and salt in a large bowl. In a medium bowl, mix together mashed bananas, applesauce, margarine, and vanilla extract. Pour the banana mixture into the dry ingredients and lightly mixed until combined. Stir in optionals if desired. Pour batter into sprayed bread pan and bake for 45-60 minutes or until knife comes out clean.

This makes a fantastic banana bread, even for people on fairly strict TED's. This is also easy to make corn free if you're eliminating corn as well! The batter is thicker than "normal" banana bread, but you wouldn't be able to tell from the finished product.

I brought this to my MOPS group and they were gobbled up. I did a double batch: one with chocolate chips and one without. This is a great recipe for people with food allergies because there are no "weird" ingredients.
