1 1/2 cups oats
6 tbsp. sugar
1/2 tsp. salt
1 tsp. baking powder
1/2 cup rice milk
1/4 cup unsweetened applesauce
1 flax "egg"
1 tsp. vanilla extract
1 1/4 cups blueberries or other fruit

Mix dry ingredients in medium bowl. Stir in rice milk, applesauce, flax "egg", and vanilla extract. Lightly spray a 9x9 pan. Put blueberries at bottom of pan. Pour the rest of the ingredients on top and spread evenly. Bake at 350 for 25-30 minutes or until golden. Top with rice milk or eat plain. You can make this ahead of time and bake the next morning as well.

YUM YUM YUM! I wanted a healthy snack for the evening tonight so I went ahead and made these although I did not have the applesauce on hand, and I substituted 2 tbsp of honey for the sugar, and they were delicious! I used bananas and blueberries, the bananas really made it a sweet treat. My husband who has little to do with oatmeal asked for a bite and loved it :) This will be a regular staple in my home now.
