Simple Donuts

For the Donuts:
1 lb. prepared pizza dough (from a local bakery)
vegetable oil

For the Glaze:
2 tbsp. vanilla rice milk (or rice milk + 1/2 tsp. vanilla)
1 cup powdered sugar

To make donuts: Heat oil to 350.  On a floured surface, roll pizza dough out to about 1/2" thick.  Cut 2" rounds in dough and then 1" rounds in the middle of each circle.  Should make about a dozen donuts and donut holes.  Drop dough into hot oil in batches.  Cook for about 45 seconds per side - donuts will puff up and get golden.  Cool on a wire rack.  Glaze while still warm.

To make glaze:  On medium heat in a small saucepan, warm vanilla rice milk.  Remove from heat and slowly whisk in powdered sugar.  Dip donuts in glaze and return the donut to the wire rack, glaze side up.  If desired, shake donut holes in paper bag with granulated sugar.

    These are not as light and fluffy as the name brand donuts we all know and love. It is still fun to make your own donuts though! This is a very quick way to go.
