2 cups flour or flour substitute
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. pumpkin pie spice OR cinnamon

1/2 cup margarine, softened
1 cup sweet potato puree
1 cup brown sugar
2 tbsp. maple syrup
1 tsp. vanilla

In a small bowl, combine flour, baking powder, baking soda, pumpkin pie spice, and salt. In a large bowl, mix the margarine, sweet potato, brown sugar, maple syrup, and vanilla until well combined. Slowly incorporate the flour mixture into the wet mixture. Cover and chill for 2 hours. Drop by heaping spoonful onto baking stone. Bake at 350 for 12-15 minutes or until beginning to brown.

These remind me of pumpkin cookies and they are nice and soft. I did about 1/3 whole wheat, 1/3 all purpose, and 1/3 oat flour in mine.
