2 1/4 cups flour or flour substitute

1 cup margarine, softened

3/4 cup brown sugar

In a large bowl, cream together the margarine, sugar, brown sugar, and vanilla. In a blender or small food processor, whip together the enerG egg replacer powder (4 1/2 tsp.) with 6 tbsp. water until it is thick and creamy to make 3 eggs. Add to sugar mixture and combine thoroughly. In a medium bowl, combine flour, baking soda, and salt. Gradually beat the flour mixture into the sugar mixture until combined. Stir in chocolate chips. Drop by tablespoonfuls onto a baking stone. Bake at 375 for 9-12 minutes or until golden brown. Makes about 3 dozen.

These were phenomenal. I didn't know I could make a eggless chocolate chip cookie that tasted so good. I used a combination of flours as well: 1 cup whole wheat, 3/4 cup oat flour, 1/2 cup all purpose flour. You couldn't even tell they weren't "normal" chocolate chip cookies.
