Cheddar Cheese Sauce

3 tbsp. butter or margarine
3 tbsp. flour or flour substitute
1/2 tsp. salt
1/8 tsp. white pepper
1 1/2 cups milk
1 cup cheddar cheese

Melt butter; remove from heat.  Stir in flour and seasonings.  Gradually add milk, stirring until well mixed.  Cook over low heat, stirring constantly, until thickened and smooth.  Cook for 5 minutes longer; remove from heat.  Add cheese.  Stir until smooth and well blended.  Serve over pasta or vegetables.  Makes 2 cups.

    This would be wonderful over veggies. We made this for my 2 year old son with raw cheese and raw milk. We knew that cooking it would pasteurize the milk so it was just a little test. He was up most of the night afterward just being fussy so we are going to wait a bit before trying again.
