Filling:
6 medium pears, peeled, cored, and sliced
2 cups fresh or frozen cranberries
1/2 cup brown sugar
1/4 cup flour or flour substitute OR 2 tbsp. cornstarch
1/2 tsp. cinnamon
Topping:
1 1/2 cups flour or flour substitute
1/2 cup sugar
3/4 tsp. baking powder
1/4 tsp. salt
1/3 cup margarine, melted and cooled
2 tbsp. maple syrup, agave nectar, or honey
1 tsp. vanilla
1 egg replacer

In a large mixing bowl, gently mix together pears, cranberries, brown sugar, flour, and cinnamon. Pour into a 9x9 baking pan. In a medium bowl, combine flour, sugar, baking powder, and salt. In a small bowl, whisk together margarine, maple syrup, vanilla, and egg replacer. Pour into flour mixture and stir just until combined. Break the topping dough up into chunks with your fingers to distribute evenly over the pears in the pan. Bake for 30 minutes until topping is golden.

This is a nice change from the typical cobbler. It is fruit too so I don't feel so bad about indulging. :-)
