1/2 cup margarine, melted and cooled
1/2 cup sugar
1/2 cup maple syrup
2 tsp. vanilla
1 egg replacer
1 cup flour or flour substitute
1/4 tsp. salt
1 cup finely shredded coconut

In a large bowl, combine margarine, sugar, maple syrup, vanilla, and egg replacer and whisk until smooth. Add in flour and salt and stir just until no streaks remain. Add in coconut (finely shredded in a coffee grinder or bullet) and stir. Pour into sprayed 8x8 or 11x7 baking dish. Bake at 350 for 28-33 minutes or until blondies are set and lightly browned. Cool in pan on a wire rack.

Just got finished making this- unbelievably delicious!! Best dessert I've had, hands down, since we started this mspi journey. I used an 8X8 dish- but for some reason mine cooked for 40 minutes- and that was still with a nice super soft center. ?? SO GOOD!

These were so rich and delicious. I used a good quality Grade B Organic Maple Syrup and they were just phenomenal. I used whole wheat white flour and enerG to replace my egg.
